You make enchiritas, or chalupas or some damn thing. I grilled up a bunch of peppers and onions, and rolled that, with the leftover jerk pork, into tortillas stuffed with cheese and ladled some home-made enchilada sauce into and onto them. That sauce was outstanding. I could put it on live mice but, you know, that’d be a holy mess.
I thought I was making enchiladas but I guess I don’t really know what enchiladas are. We can call them theoretical enchiladas. Whatever they were they were really great if only enchilada-ish. Maybe I put too much cheese on them. Is that even possible? Anyway, I need to go look up a good recipe for enchiladas in case I find myself with leftovers again.
Definitely not possible to put too much cheese on them.. Send me the sauce recipe!
