Don’t leave them all that long in your cupboard or this could happen. I had to scrap my plans for beets in vinaigrette.
Seriously. They were not really in my larder all that long! I thought beets were supposed to be one of those winter vegetables that you could rely on to be around in the dead of winter when nothing else was available. Why else would anyone ever have eaten them?
