If the writers at Fine Cooking can sit around and blat out recipes I think I can too. Or at the very least I can improve on them with impunity. I knew I was going to remake that tomato pie. Once I realized how good it was I just couldn’t let it drop but I really had to make it mine.
And while a store bought pie crust is probably fine. I mean, it’s fine, I’m a snob. I did opt to use their crust recipe because it is very dry. The cornstarch does that (I’m guessing). I roasted the tomatoes and added tapioca to the juice. I did not caramelize the onions and I added thyme to the herb mix.
And it was considerably less work. Well, that and I knew what I was doing this time. It got rave reviews.
