The liver. This turkey though had a gigantic liver (probably a drinker). No one, not one person, has ever noticed that there is liver in my stuffing but it would be missed if it were not there. I suppose it’s like anchovies in things (I would not miss them). But I only used half of the liver and put the other half in the stock.
The heart is a gratuitous shot. I did not use that in the stuffing it was too gross.
