Back when I had a restaurant, we used to make the cake mix itself in a stand mixer and then the actual rum cake with a hand mixer. I don’t recall what I was thinking there but as I was making the rum cake this time I thought why not use a processor. This isn’t one of those cakes that needs molly coddling or worrying about gluten strands.
I just blitzed it up in the processor, it took 5 minutes. That part was easy. Getting the damn thing out of the pan was beastly.
