Irish flag salad

The happiest of holidays has come and gone and with it one of my personal favorite salads. I suppose you could make this with canned cannellini beans if you rinsed them well. These are Rancho Gordo giant white lima beans that I carefully hydrated so they wouldn’t blast apart. The carrots are blanched so they were still crunchy but not startlingly more crunchy than the beans. There’s arugula and celery, and Karen’s caper dijon vinaigrette.

It was good, great even but the leftovers the next day were better.
