Although I used corn I grilled myself (in the husk, I must say) and that does make a difference, you can make this amazing salad with frozen corn just as easily. Two cups of corn, one can (rinsed) of black beans, a small onion chopped, cilantro, oil and vinegar. Salt and pepper.
That’s it. Or you can add olives, peppers, avocado and use salsa as dressing.
It always tastes good and looks like a million bucks on a table. The addition of those tiny tomatoes I can see no use for except as garnishes was brilliant. Nothing like a cute garnish.
