Err on the side of burnt, as regards charring the skin off a pepper anyway. I have discovered that the secret to getting the skin off a pepper is to completely charr it. Generally speaking, I HATE doing this because the skin never ever actually comes off but recently when I let things get out of hand (I thought) it totally charred and the damn skin came right off with none of this steaming it in a plastic bag crap. It was perfect.
Peppers and skins
When ever I read a recipe that calls for charring peppers and removing the charred skin (which is a process I HATE) it always tells you to put the charred peppers in a paper, or worse, plastic bag to steam them. I don’t understand why no one ever suggests putting them in a bowl with a lid, or plate on top. It works just fine and you don’t need to waste bags.
