These were like small meat loafs. Meatballoons I would say. Somehow I put too much milk into the breadcrumbs, (soda cracker crumbs, actually, they work about 50 times better than breadcrumbs) and the result was very soggy meatballoons that sorta collapsed flat on the baking sheet when I pre-baked them. Nonetheless, they were awesome.
Interesting fact: The French have a word for breadcrumbs that is a completely different word than bread or crumbs. There’s a word for crumbs, miettes, but breadcrumbs are not miettes de pain, literally crumbs of bread, breadcrumbs are chapelure. Now you won’t make that mistake again when you’re in France.
