Colcannon, Irish flag salad, reuben sandwiches. The only thing really Irish here is colcannon. It’s hard to miss with cabbage, leeks, mashed potatoes, a pound of butter and 2 cups of half and half. That stuff is amazing. My grandmother made it every Sunday. Not really. I discovered it on the internet about 10 years ago. There is no real one way to make it, cabbage (NOT KALE!!), leeks and butter seems to be the common ingredients.
I invented the salad which was awesome, those beans…my god, and the rueben sandwiches, while insanely hard to make since I didn’t have a clue what I was doing were great as well. There is corned beef in them but the sauerkraut, well, I considered it a nod to my german heritage which I basically try not to think about on St Patrick’s Day but sometimes you gotta do what you gotta do.
