In the same week as “The Cheese Thing” I made a month or so ago, I also made a different cheese thing as an appetizer. This was like a hot pimento cheese. A jar of pimentos chopped finely mixed with paprika and a bunch of different shredded cheeses including cheddar, provolone, parmesan and cream cheese. I imagine you can use nearly anything but the cream cheese in big globs made it smooshy. In a word. It was delicious and easy. I browned leftover bread to use as a delivery system but really just plain bread or Triscuits would have been better. It was delicious. And somehow I’ve lost the recipe. Although it shouldn’t be too hard to recreate, it seem more like a winter thing and as such it will be several months until I make it so I’ll have completely forgotten about it by then.
