Simple and delicious tomato sauce

This is the perfect pizza sauce. Ethan Chlebowski introduced me to this and it’s been my go-to ever since. It’s a far cry from the 24 hour simmered sauce I make a Christmas.

Recipe follows

The Simplest Pizza Sauce

  • 28 oz can whole peeled tomatoes
  • 3 tbsp butter
  • 2 cloves garlic
  • 1/4 onion
  • oregano
  • red pepper
  • Salt to taste

Method

  1. Add the can of tomatoes, butter, garlic, onion, oregano, red pepper, and a small pinch of salt to a saucepan. Stir to combine. Set heat to medium-low and let cook undisturbed for 15 minutes. Stir once and let cook for another 15 minutes.
  2. Blend the sauce (optional). Taste the sauce, add salt if needed.
  3. Store in the fridge for up to a week.

  1. I always start my red sauce with jarred or canned tomatoes. And this is from a 5th generation Italian. Doctor the sauce all you want, but the base should be a no-brainer. Many years ago, I stuck a fork in tomatoes, boiled them, peeled the skin, just not worth all that effort when someone has already done it very nicely for you!
