Rice and pink peas for an army

My grandniece turned 1. I’ve never really seen myself as the kind of person who has birthday parties for babies, but it turns out I am. And I liked it. Dinner for family that included jerk chicken and rice with peas for an army not that she was going to be eating any of it, she was asleep when the grownups finally ate. And to be honest, her birthday treat was a hot dog and carrot cake.

On the advice of a certain mounted officer of the law I used 3 cups of uncooked rice for 11 people. I am sure I’ve made large amounts of rice before and it shouldn’t be all that hard to accomplish but this really didn’t work out. It was edible but the seasoning was off and the rice was under cooked. Al dente rice is not on my list of all things delicious. Plus, I was thinking it was going to be cajun-ish or creole possibly. I used two packets of Sázon, the Mexican seasoning, garlic powder, peppers and onions and yet it was seriously bland-o-rama.

And since 3 cups is actually enough for 45 people, I’ll be eating this crunchy rice for another week. I don’t know if there’s a way to hydrate it* but Imma try.
