He’s hard of hearing, very grouchy and diabetic. So I made him a sugar free cake, not really to cheer him up because that’s not really possible and frankly, at this point I don’t really care. I make these things for him upon occasion and because no one else is going to eat these nasty things, I make little cakes. One third of a box, it works like a charm. You just need a kitchen scale.
So I had 1/3 of a sugar free yellow cake but I know he likes chocolate so I just added a couple tablespoons of cocoa powder, some chocolate fudge pudding (extra moist pudding cake!), plus I used coffee instead of water and a shot of chocolate extract to distract him from the hideously unpleasant taste of the sweeteners they use.
I made the frosting out of cream cheese and butter with cocoa powder and Equal. It looked good but the taste was, well, filthy. I hope he liked it.
