I think Sara Moulton (I love her) made this recipe up, or at least she is the person who decided to eat cheesecake hot. It’s utterly simple and delicious. The bonus of making it in little ramekins is that you don’t have to worry about the top of the cheesecake cracking not that I really care all that much about that. Even if it does, I’d just throw on a dollop of butterscotch sauce. It’s all good.
Recipe follows


Hot Chocolate Cheesecake
Preheat your oven to 350.
Butter 4 ramekins
1 block of cream cheese
4 oz chocolate melted
1tsp vanilla
Whip these together
You can do this in a food processor which is easy but cleanup’s a pain
Whisk together
1/4 cup of sugar
2 TBL flour
pinch salt
Add to cream cheese mixture and blend
Then add one large egg and re-blend
Fill ramekins, put on cookie sheet and bake for 20-25 minutes
Eat hot. You may be tempted to put ice cream on this and
it would taste good but be careful, ice
cold liquid on a hot ramekin will make it shatter.
Unless you’re using Pyrex ramekins.
