Episodic canning

Well, it’s harvest time at the old farmstead. And while it’s not exactly wheelbarrows full, it’s more than I can eat, so I am canning. Unfortunately canning has to be done in batches since everything ripens in turns which is probably good if you have 3 acres of tomatoes. For me it means a few weekends of putzy canning. 

I like small cans (jars actually) since I don’t use large amounts usually and I can open 2 or 3 jars if I need more but if I open one big one and then don’t use it lickety split, it will mold. No preservatives and all.
