I had some very old mushrooms that needed to be cooked and for some reason that escapes me I ground them up in the processor and sautéed them, a trick to remove their water.
It looks like ground beef but it’s mushrooms. I added some “zesty” Italian pepper relish. Omelet, no, taco, no. Breakfast, yes. It was so good. Think of it as a tacomelet.
And I renewed my relationship with my crepe pan. May have to make those soon.
