I just don’t get cast iron. This grill plate, which rusts if I glance at water, is just nothing but an enormous problem. It rusted and I took it into the shower with me and scrubbed the living Jesus out it with a wire brush and Barkeeper’s Friend. Then I put it on the stove to dry (with the burners on) and then once it was dry I coated it with block oil. It was rusted less than 2 days later.
Every time I see a recipe that suggests using a cast iron anything I just think “not today.”
I want to embrace cast iron but it just never cooperates for me. And it seems that I do not have the where-with-all, or the patience apparently, to season them correctly. Plus they’re so damn heavy.
