This is the most amazing soup. The sum of its parts considerably outweighs the individual pieces. Three stalks of broccoli, one small onion, 2 TB butter, 2 cups or so of chicken broth. Salt and pepper. A lot of pepper.
Cut off and peel the stalks, cut into chunks. Sauté the onion in the butter until soft, add the stalk chunks and stock simmer until near soft, say, 10 minutes, add the spear and simmer another 10 minutes and then blend.
I ate all of this within about 20 minutes.
