The scene was gruesome. But you gotta do what you gotta do and it was a damn process.

The best chicken is the thigh, and the best thigh is a deboned one with the skin left on. It’s a pain and seems sort of wasteful but I mitigated that by using the bones for stock, picking the leftover meat off the bone and making chicken salad. I then made these little delicious thigh packages and served them with linguine and roasted cherry tomatoes. Roasted cherry tomatoes may look and sound good but they are sooooo…meh. I even knew this going in but thought maybe I’d give them another go.

Thighs were good though.
